Cooking on weekdays is a challenge. After a long day, I just want to lie on my couch and watch TV—I think a lot of people can relate. To avoid cooking every night, I usually batch prep my food over the weekend (and film my food clips!). I prefer quick and easy recipes, saving sophisticated dishes for special occasions. (Unfortunately, my favorite Vietnamese food falls into that category. My ancestors must have had a lot of time on their hands to chop and clean a thousand types of herbs for a single meal 😱🥵). This dish is super simple: Trim the fat from the chicken. Make a few cuts in the meat so it absorbs the miso-peanut sauce better. Start cooking the chicken [e.g., in a skillet over medium heat]. While it cooks, add miso, peanut butter, garlic, soy sauce, and lemon juice into a blender and blend until smooth. When the meat is almost cooked through, brush the sauce over it, flip it, and brush another layer on the other side. Cook for another 2 minutes so the peanut butter melts and caramelizes onto the chicken. Turn off the heat and sprinkle with chopped green onions. Serve hot with rice. Miso peanut glaze:
3 tbsp creamy peanut butter
1.5 tbsp miso paste
1.5 tbsp honey
1 tbsp fresh lemon juice
3 cloves garlic, finely grated 3 tbsp soy sauce
2 tbsp sesame oil
1 tbsp warm water
To complete
2-3 spring onions, finely sliced
1 tbsp toasted sesame seeds
Steamed white rice
